Fresh Local Oysters

Fresh Local Oysters

Our Process

  • At Hudson’s, very few oysters are out of the water for more than a few hours before they reach your plate.
  • Nearly 90% of the seafood we serve is harvested directly from the waters surrounding our restaurant.
  • Our Shell Ring Oyster Co., we harvest Hilton Head oysters just steps away. Guests can be sitting on the dock as two bushels are unloaded, and eating one of those oysters within minutes. Learn about our oyster company.
  • This direct connection to the source eliminates the middleman and guarantees an oyster experience that is as fresh and authentic.

Season

  • Local oysters are at their best during the “R” months, from November through March.
  • Cooler temperatures and the absence of spawning during this time make the oysters plump, flavorful, and abundant.
  • This short but celebrated season is when the briny sweetness of Hilton Head oysters is at its peak.

Sustainability

  • Through our Shell Ring Oyster Co. and partnerships with local oystermen, Hudson’s practices sustainable harvesting that protects the surrounding waters.
  • Sourcing oysters directly from nearby creeks minimizes transport, reduces environmental impact, and ensures the health of the fishery for future generations.
  • Our approach safeguards the delicate Lowcountry ecosystem while providing guests with the freshest possible seafood.

Flavor & Experience

  • Hilton Head oysters are known for their extreme brininess, a result of the high salinity in our waters, caused by the lack of freshwater tributaries.
  • The result is a sweet, bold, and unmistakably local flavor that can’t be replicated elsewhere.
  • Guests are invited to enjoy these oysters freshly shucked on the dock, creating a dining experience that captures the essence of the Lowcountry.
